Delicious New Years Resolution Diet: Dessert

 

Everyone loves dessert! These brownies only taste too good be healthy, meanwhile they are the perfect addition to your New Years Resolution Diet Menu!

 

Fudgy Cream Cheese Brownies

Ingredients

3/4 cup sugar
1/4 cup plus 2 tablespoons reduced-calorie stick margarine, softened
1 large egg
1 large egg white
1 tablespoon vanilla extract
1/2 cup all-purpose flour
1/4 cup unsweetened cocoa
Cooking spray
1 (8-ounce) block 1/3-less-fat cream cheese, softened
1/4 cup “measures-like-sugar” calorie-free sweetener
3 tablespoons 1% low-fat milk

Preheat oven to 350°.

Beat sugar and margarine with a mixer at medium speed until light and fluffy. Add egg, egg white, and vanilla; beat well. Gradually add flour and cocoa, beating well. Pour into an 8-inch square pan coated with cooking spray.

Beat cream cheese and sweetener with a mixer at high speed until smooth. Add milk; beat well. Pour cream cheese mixture over chocolate mixture; swirl together using the tip of a knife to create a marbled effect.

Bake at 350° for 30 minutes. Cool completely in pan on a wire rack. Cut into squares.

Tip: Don’t use reduced-calorie or fat-free tub margarine in this recipe because those products contain water, which will make the brownies gummy.

Keeping Your Diet Delicious: Snack

 

Great news! Snacking throughout the day is actually extremely healthy. Finding the right snack however can be difficult. This recipe is scrumptious snack helping you to continue your New Years Resolution Diet!

 

Parmesan Carrot Fries Recipe

Ingredients

1 pound fresh carrots
2 teaspoons olive oil
1/2 teaspoon flaky sea salt
Cracked black pepper, to taste
2 tablespoons fresh basil, chopped
2-3 tablespoons freshly grated Parmesan

Preparation

  1. Preheat oven to 450°F.
  2. Peel carrots and cut into thin matchstick slices.
  3. In a medium bowl, toss slices in olive oil, salt and pepper.
  4. Spread out carrots on a baking sheet and bake for 12 to 15 minutes or until the carrots are browned slightly.
  5. Remove from the oven and sprinkle with fresh basil and Parmesan cheese before serving.

Leftovers?

Reheat them in the oven at 400°F for five to eight minutes.

Keep Your Diet Delicious: Dinner

 

The most difficult part of a diet is sacrificing all the flavors and food that you know and love. At Chocolate Mousse Catering we can help you keep your diet..delicious!

Let us help your day by having dinner the right way!

Dinner:

Spinach Lasagna

INGREDIENTS:

  • 3 cups (or 1 24-ounce jar) marinara sauce
  • 9 no-boil lasagna noodles (you may not use the entire package)
  • 1 (15 ounce) container ricotta cheese (or cottage cheese)
  • 2 cups shredded Mozzarella cheese
  • 2 cups chopped fresh spinach leaves, loosely packed
  • 3/4 cup roughly-chopped fresh basil leaves, loosely packed and divided
  • 1/3 cup freshly-grated Parmesan cheese

DIRECTIONS:

Preheat oven to 350 degrees F.

In an 8×8-inch or 9×9-inch baking pan, spread 3/4 cup of marinara sauce evenly across the bottom of the pan. Layer 3 lasagna noodles in an even layer, followed by half of the ricotta cheese, 1 cup of Mozzarella, 1 cup spinach and 1/4 cup fresh basil. Repeat with a second layer of marinara, noodles, ricotta, Mozzarella, spinach and basil. Then finish with a final layer of marinara, noodles, marinara and Mozzarella.

Cover pan with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and begins to brown around the edges.

Remove and set on a cooling rack. Sprinkle with Parmesan cheese and the remaining fresh basil. Serve warm.
