Super Bowl Stout Brownies

SUPER BOWL STOUT BROWNIES

INGREDIENTS

1 C all purpose flour
3/4 C unsweetened cocoa powder
1/4 tsp salt
6 Tbs of unsalted room temperature butter
8 ounces dark bittersweet chocolate, chopped
4 large eggs, room temperature
1 C granulated sugar
10 ounces Obsidian Stout
1¾ C semi-sweet chocolate chips

PREPARATION

Preheat the oven to 375 degrees and line a 9×9 pan with nonstick foil.

In a medium bowl: whisk together flour, cocoa powder, and salt and set aside for later. Melt the butter, 3/4 C chocolate chips, and bittersweet chocolate together in a non-stick pot on the stovetop.

In a large bowl: whisk the eggs and sugar for about two-three minutes, until it is light and fluffy. Add the melted chocolate to this mixture and beat until combined.

Now, beat the flour mixture into your chocolate mixture and whisk in the beer. After whisking in the beer, the batter will seem thin but once you start mixing it up it gets much better. Next, drop the chocolate chips over the batter, but don’t mix them in. Some will sink in, some will stay on top. Pour your batter into the prepared pan and pop it in the oven.

You’ll need to bake it for about 25-35 minutes. Just bake it until a toothpick in the center comes out almost cleanly. Then cool these to room temperature.

Savory Superbowl Chili

INGREDIENTS:

1 lb. ground beef
1 small white onion, diced
3 (15 oz.) cans diced tomatoes with green chiles
1 (15 oz.) can of black beans,
1 (15 oz.) can of kidney beans
1 (15 oz.) can of corn
2 Tbsp. chili powder
1 tsp. Brown Sugar

DIRECTIONS:
In a large stockpot, cook ground beef over medium-high heat until browned, stirring frequently. Using a slotted spoon, transfer the cooked beef to a separate plate and set aside. Reserve 1 tablespoon of grease in the stockpot, and discard the rest.

Add the onion to the stockpot and saute for 4-5 minutes, or until soft.

Add remaining ingredients and the cooked beef to the stockpot, and stir to combine. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 10 minutes.

Serve immediately, garnished with optional toppings if desired.

Delicious New Years Resolution Diet: Dessert

Everyone loves dessert! These brownies only taste too good be healthy, meanwhile they are the perfect addition to your New Years Resolution Diet Menu!

Fudgy Cream Cheese Brownies

Ingredients

3/4 cup sugar
1/4 cup plus 2 tablespoons reduced-calorie stick margarine, softened
1 large egg
1 large egg white
1 tablespoon vanilla extract
1/2 cup all-purpose flour
1/4 cup unsweetened cocoa
Cooking spray
1 (8-ounce) block 1/3-less-fat cream cheese, softened
1/4 cup “measures-like-sugar” calorie-free sweetener
3 tablespoons 1% low-fat milk

Preheat oven to 350°.

Beat sugar and margarine with a mixer at medium speed until light and fluffy. Add egg, egg white, and vanilla; beat well. Gradually add flour and cocoa, beating well. Pour into an 8-inch square pan coated with cooking spray.

Beat cream cheese and sweetener with a mixer at high speed until smooth. Add milk; beat well. Pour cream cheese mixture over chocolate mixture; swirl together using the tip of a knife to create a marbled effect.

Bake at 350° for 30 minutes. Cool completely in pan on a wire rack. Cut into squares.

Tip: Don’t use reduced-calorie or fat-free tub margarine in this recipe because those products contain water, which will make the brownies gummy.
