Keep Your Diet Delicious: Lunch

The most difficult part of a diet is sacrificing all the flavors and food that you know and love. At Chocolate Mousse Catering we can help you keep your diet..delicious!

This is a scrumptious lunch recipe, making it even easier to enjoy your diet!

 
Italian Quinoa Salad
 
Ingredients
  • 1 cup quinoa, cooked
  • ½ cup small white cannelloni beans
  • ¼ cup yellow onion, finely chopped
  • 1 roasted bell pepper, chopped
  • ½ cup marinated artichokes*, halved
  • ¼ cup fresh bell pepper, chopped
  • 1 medium Roma tomato, chopped
  • ½ teaspoon lemon zest
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • Freshly ground black pepper
  • ⅛ teaspoon granulated garlic
  • ¼ teaspoon dried oregano
  • Optional: ¼ teaspoon red chili flakes
Note: If you don’t use marinated artichokes, be sure to add ½-1 tablespoon extra virgin olive oil, a generous dash of sea salt, and increase the oregano to ½ teaspoon!
 
Directions
  1. Prepare quinoa according to package instructions.
  2. In a medium-sized bowl combine all ingredients and toss to combine. Taste and adjust spices to taste.
  3. Optional: If time allows, refrigerate for about 30 minutes to really let flavors meld. Enjoy!

Keep your New Years Resolution Diet Delicious!

This recipe is a great way to start your day!

 

Pina Colada Yogurt Parfaits

 

Ingredients
  • 2 cups European Style Yogurt
  • Fresh pineapple, chopped – 1 cup
  • Unsweetened coconut flakes – ½ cup, lightly toasted
  • Raw Honey – 2 tbsp plus 1 tsp for drizzling 
  • Chia seeds – 4 tsp, divided (optional) 

Instructions

  1. In a bowl mix the yogurt, 2 tbsp honey or stevia and 3 tsp chia seeds, set aside
  2. In two glasses layer a few tbsp. of the pineapple, a little of the coconut flakes and some of the yogurt. Repeat for as many layers as you want ending with pineapple and coconut on top. Sprinkle the remaining teaspoon chia seeds on the top of the parfaits and drizzle the remaining 1 tsp honey over the top. Serve immediately.
